1. The Secret in the Growing: Sunlight vs. Shade
The distinction begins long before the harvest, right in the tea garden.
Green Tea (Sencha): Grown under the full embrace of the sun ☀️ until the moment of harvest. This exposure triggers the development of catechins, giving the tea its refreshing, crisp clarity and a sophisticated, slight astringency. It is the flavor of a bright, clean morning.
Matcha: Roughly three weeks before harvest, the tea bushes are shaded with covers to block out direct sunlight. Deprived of light, the leaves overproduce chlorophyll to survive, turning a vibrant, deep emerald. This metabolic shift transforms bitterness into rich "Umami" and a natural, lingering sweetness.
2. The Architecture of Enjoyment: Steeping vs. Consuming
The way the tea reaches your cup is structurally different.
Green Tea: You steep the dried leaves in hot water and enjoy the "extract." It is an exercise in subtlety—tasting the delicate components that the water manages to coax out of the leaf.
Matcha: The leaves (with stems and veins removed) are stone-ground into a micro-fine powder. When you drink Matcha, you are consuming 100% of the leaf. You aren't just drinking an infusion; you are taking in the entire spectrum of nutrients, antioxidants, and vibrant flavor profiles.
